Semi Naked Fresh Berry Cake

I didn't have very long to make this cake, it had to be done in an afternoon which isn't ideal, I like to spend longer than that on a cake. It still needed to look special as it was for my mother-in-laws 80th birthday – but being flat out with my Christmas orders had left me short on time.

I love the semi-naked icing look, it's perfect for when you don't have as long to fuss like I would over a super smooth fondant covered cake. I decided to go with a vanilla cake as everyone loves that – layered with vanilla buttercream and raspberry conserve.

To make it extra special it's piled high with fresh blueberries, blackberries, raspberries and red currents with a white chocolate ganache glaze and some meringue kisses. Even though it didn't take too long to make hopefully it still had that wow factor.
