Carrot Cake with Lemon Cheese Frosting

A lovely little carrot cake with lemon cream cheese frosting made to celebrate a special lady's birthday.

I think carrot cake has to be one of my favourites too, I kid myself that its healthy cake!

In 2015 I made it through to the last 50 in the last audition of The Great British Bake Off. Sadly I wasn't chosen for the programme but I need to carry on my journey as I can't imagine my life without baking.
